Ingredients
- 6 to 8 average squash, sliced
- 1 small onion, chopped
- 2 eggs
- salt and pepper to taste
- 2 Tbsp. margarine
- 1 small can green chilies, chopped
- 2 c. grated cheese
- 1 pkg. Pepperidge Farm herb seasoned stuffing
Method
- Cook squash in enough water to cover until tender; drain.
- Add salt, pepper, margarine, onion, green chilies and beaten eggs. Put in buttered casserole dish, half of the squash, stuffing mix and cheese; repeat layers, ending with cheese.
- Bake at 350° until cheese cooks through and browns on top.
