Ingredients

  • 6 to 8 average squash, sliced
  • 1 small onion, chopped
  • 2 eggs
  • salt and pepper to taste
  • 2 Tbsp. margarine
  • 1 small can green chilies, chopped
  • 2 c. grated cheese
  • 1 pkg. Pepperidge Farm herb seasoned stuffing

Method

  • Cook squash in enough water to cover until tender; drain.
  • Add salt, pepper, margarine, onion, green chilies and beaten eggs. Put in buttered casserole dish, half of the squash, stuffing mix and cheese; repeat layers, ending with cheese.
  • Bake at 350° until cheese cooks through and browns on top.
