Ingredients

  • 2 Tbsp. vegetable oil
  • 1 medium carrot, diced
  • 1/2 medium onion, diced
  • 2 qt. chicken broth
  • 1 lb. potatoes, peeled and cut into 1/2-inch cubes
  • 1 lb. ripe tomatoes, peeled, seeded and diced or canned tomatoes, drained
  • 2 tsp. Old Bay seafood seasoning or add to taste
  • 3/4 lb. Maryland crabmeat (cartilage removed)
  • 1 Tbsp. chopped parsley

Method

  • Place the oil in a soup pot.
  • Add the carrots and onions. Cover the pot and cook the vegetables over low heat just until softened.
  • Add the broth, potatoes, tomatoes and Old Bay seasoning. Simmer just until the potatoes are tender, approximately 10 minutes.
  • Add the crabmeat and parsley and heat through.
