Ingredients
- 2 Tbsp. vegetable oil
- 1 medium carrot, diced
- 1/2 medium onion, diced
- 2 qt. chicken broth
- 1 lb. potatoes, peeled and cut into 1/2-inch cubes
- 1 lb. ripe tomatoes, peeled, seeded and diced or canned tomatoes, drained
- 2 tsp. Old Bay seafood seasoning or add to taste
- 3/4 lb. Maryland crabmeat (cartilage removed)
- 1 Tbsp. chopped parsley
Method
- Place the oil in a soup pot.
- Add the carrots and onions. Cover the pot and cook the vegetables over low heat just until softened.
- Add the broth, potatoes, tomatoes and Old Bay seasoning. Simmer just until the potatoes are tender, approximately 10 minutes.
- Add the crabmeat and parsley and heat through.
