Ingredients
- 2 c. milk
- 1/2 c. sugar
- 4 tsp. salt
- 8 Tbsp. shortening
- 2 c. water
- 1 cake yeast
- 1/4 c. lukewarm water
- 12 c. (about) sifted flour
Method
- Scald milk and add sugar, salt and shortening.
- After shortening melts, add water and cool until lukewarm.
- Add yeast, softened in 1/4 cup lukewarm water.
- Never use hot water as it kills the working power in the yeast (105° to 115°).
- Add flour gradually, mixing it in thoroughly.
- When dough is stiff, turn on a lightly floured board and knead until smooth and satiny.
- Shape into a smooth ball; place in a greased bowl.
- Cover with wax paper and a tea towel.
- Let rise in a warm place until it doubles in bulk.
