Ingredients

  • 2 c. milk
  • 1/2 c. sugar
  • 4 tsp. salt
  • 8 Tbsp. shortening
  • 2 c. water
  • 1 cake yeast
  • 1/4 c. lukewarm water
  • 12 c. (about) sifted flour

Method

  • Scald milk and add sugar, salt and shortening.
  • After shortening melts, add water and cool until lukewarm.
  • Add yeast, softened in 1/4 cup lukewarm water.
  • Never use hot water as it kills the working power in the yeast (105° to 115°).
  • Add flour gradually, mixing it in thoroughly.
  • When dough is stiff, turn on a lightly floured board and knead until smooth and satiny.
  • Shape into a smooth ball; place in a greased bowl.
  • Cover with wax paper and a tea towel.
  • Let rise in a warm place until it doubles in bulk.
