Ingredients
- 1 lb. scallops
- 1 tsp. parsley
- 1/4 tsp. salt
- 1/4 tsp. tarragon flakes
- 2 Tbsp. lemon juice
- 1/2 stick margarine or butter, melted
- 5 medium slices French bread
Method
- Wash scallops, then drain on paper towel.
- Prepare crumbs from French bread by cutting up into small pieces or blend lightly in blender.
- Put crumbs into a pan with melted butter or margarine. Add parsley, tarragon, salt and lemon juice to the buttered crumbs. Stir this mixture thoroughly.
- Add scallops and coat with mixture. Put scallop mixture into a shallow dish; bake in preheated oven at 350° for 15 minutes.
- Run under broiler to brown.
- Serves 2.
