Ingredients

  • 1 lb. scallops
  • 1 tsp. parsley
  • 1/4 tsp. salt
  • 1/4 tsp. tarragon flakes
  • 2 Tbsp. lemon juice
  • 1/2 stick margarine or butter, melted
  • 5 medium slices French bread

Method

  • Wash scallops, then drain on paper towel.
  • Prepare crumbs from French bread by cutting up into small pieces or blend lightly in blender.
  • Put crumbs into a pan with melted butter or margarine. Add parsley, tarragon, salt and lemon juice to the buttered crumbs. Stir this mixture thoroughly.
  • Add scallops and coat with mixture. Put scallop mixture into a shallow dish; bake in preheated oven at 350° for 15 minutes.
  • Run under broiler to brown.
  • Serves 2.
