Ingredients

  • 1 ct ricotta cheese - (15 ounce)
  • 1 c. confectioners' sugar
  • 1/4 c. minced maraschino cherries
  • 1/4 c. minced blanched almonds
  • 1/4 c. miniature semisweet chocolate chips
  • 1 x chocolate graham cracker pie crust (9" dia)

Method

  • In a large bowl, combine the ricotta cheese and confectioners' sugar; mix till smooth and well combined.
  • Stir in the cherries, almonds, and chocolate chips.
  • Spoon into the pie crust, cover, and freeze for at least 3 hrs.
  • Remove from the freezer and allow to sit for at least 10 to 15 min before cutting.
  • Cover and store any leftovers in the freezer.
  • This recipe yields 8 servings.
  • Comments: I like to top each slice with a dollop of whipped cream and a maraschino cherry before serving.
