- 1/4 c. olive oil
- 1/4 c. butter
- 2 bunches scallions (white and tender green parts), chopped
- 8 cloves garlic
- 2 lb. shrimp, cleaned (shell on)
- 1/4 c. white wine
- 1 1/2 Tbsp. Rose's lime juice
- 1 whole roasted red pepper, chopped (about 1/2 c.)
- 1/3 c. chopped cilantro
- 12 oz. pasta
- Parmesan cheese
Method
- Heat olive oil and butter in large skillet over medium heat. Saute scallions and garlic for one minute.
- Add shrimp, white wine, Rose's lime juice and red pepper.
- Cook over medium heat until shrimp are done (approximately 5 minutes).
- Add cilantro 1 minute before cooking is completed.
- Serve over cooked pasta with Parmesan cheese.
- Serves four hungry people.
