Ingredients

  • 1/4 c. olive oil
  • 1/4 c. butter
  • 2 bunches scallions (white and tender green parts), chopped
  • 8 cloves garlic
  • 2 lb. shrimp, cleaned (shell on)
  • 1/4 c. white wine
  • 1 1/2 Tbsp. Rose's lime juice
  • 1 whole roasted red pepper, chopped (about 1/2 c.)
  • 1/3 c. chopped cilantro
  • 12 oz. pasta
  • Parmesan cheese

Method

  • Heat olive oil and butter in large skillet over medium heat. Saute scallions and garlic for one minute.
  • Add shrimp, white wine, Rose's lime juice and red pepper.
  • Cook over medium heat until shrimp are done (approximately 5 minutes).
  • Add cilantro 1 minute before cooking is completed.
  • Serve over cooked pasta with Parmesan cheese.
  • Serves four hungry people.
