Ingredients

  • 1/4 cup olive oil divided
  • 1/4 cup hummus
  • 2 teaspoons lemon juice
  • 1/8 tablespoons salt
  • 1/8 teaspoon black pepper
  • 1 can chickpeas, drained
  • 2 avacados, chopped
  • 1/2 english cucumber , sliced
  • 8 radishes, sliced
  • 8 ounce riced cauliflower

Method

  • Warm skillet over medium heat with 1 Tsp. of olive oil. Once heated add riced cauliflower.
  • Cook until soft about 6-8 minutes. Remove from heat.
  • Whisk together hummus, remaining olive oil, lemon juice, salt and pepper until smooth.
  • Divide cauliflower among 4 deep bowls. Top with chickpeas, avacado, cucumber and radishes. divide hummus dressing among the bowls.
