Ingredients
- 1/4 cup olive oil divided
- 1/4 cup hummus
- 2 teaspoons lemon juice
- 1/8 tablespoons salt
- 1/8 teaspoon black pepper
- 1 can chickpeas, drained
- 2 avacados, chopped
- 1/2 english cucumber , sliced
- 8 radishes, sliced
- 8 ounce riced cauliflower
Method
- Warm skillet over medium heat with 1 Tsp. of olive oil. Once heated add riced cauliflower.
- Cook until soft about 6-8 minutes. Remove from heat.
- Whisk together hummus, remaining olive oil, lemon juice, salt and pepper until smooth.
- Divide cauliflower among 4 deep bowls. Top with chickpeas, avacado, cucumber and radishes. divide hummus dressing among the bowls.
