Ingredients

  • 1 (3 lb.) fryer
  • 1 lb. smoked sausage or ham, diced
  • 2 c. shrimp, cleaned and deveined
  • 2 Tbsp. shortening
  • 2 Tbsp. flour
  • 2 medium onions, chopped
  • 2 c. peeled and diced tomatoes
  • 1/2 bunch parsley, chopped
  • 2 c. raw rice
  • 1 large bell pepper, chopped
  • 1 clove garlic, chopped
  • 3 c. water
  • 1 1/2 tsp. salt
  • 1/3 bunch shallots, chopped
  • 1/2 tsp. each: thyme, Tabasco and black pepper

Method

  • Cut chicken into serving pieces.
  • Season with salt and pepper. Brown completely in melted shortening.
  • Remove from pot and make a roux with drippings and flour.
  • Add sausage or ham, which has been preboiled and drained.
  • Then add cooked chicken, onions, bell pepper, tomatoes, garlic and shrimp.
  • Cook, stirring constantly, for 10 minutes.
