- 1 (3 lb.) fryer
- 1 lb. smoked sausage or ham, diced
- 2 c. shrimp, cleaned and deveined
- 2 Tbsp. shortening
- 2 Tbsp. flour
- 2 medium onions, chopped
- 2 c. peeled and diced tomatoes
- 1/2 bunch parsley, chopped
- 2 c. raw rice
- 1 large bell pepper, chopped
- 1 clove garlic, chopped
- 3 c. water
- 1 1/2 tsp. salt
- 1/3 bunch shallots, chopped
- 1/2 tsp. each: thyme, Tabasco and black pepper
Method
- Cut chicken into serving pieces.
- Season with salt and pepper. Brown completely in melted shortening.
- Remove from pot and make a roux with drippings and flour.
- Add sausage or ham, which has been preboiled and drained.
- Then add cooked chicken, onions, bell pepper, tomatoes, garlic and shrimp.
- Cook, stirring constantly, for 10 minutes.
