Ingredients

  • 1 (14 oz.) jar nopalitos (cactus)
  • 1 white onion, cut into 1-inch strips
  • 1 clove garlic, crushed
  • 1 tsp. oregano
  • 1/3 c. olive oil
  • 1/4 c. lime juice
  • 4 plum tomatoes, cut into 1-inch strips
  • 1 bunch cilantro, chopped
  • 1 head romaine
  • 1/2 c. Feta cheese, grated
  • lime wedges

Method

  • Drain nopalitos and cut into 1-inch strips.
  • Mix nopalitos, onion, garlic, oregano, olive oil, lime juice, tomatoes and cilantro.
  • Refrigerate overnight.
  • Arrange on a platter lined with romaine.
  • Top with Feta cheese.
  • Garnish with lime wedges.
