Ingredients

  • 1/2 cup whole wheat breadcrumbs
  • 1/2 cup Parmesan cheese
  • 1 pinch fresh thyme dried is fine too
  • extra-virgin olive oil
  • fresh parsley
  • 4 chicken breasts about 450grams
  • 1 1/2 cups creamy tomato sauce with out herbs
  • 2 mozzarella cheese
  • 3 zucchinis
  • 1 egg

Method

  • Prep: Preheat the oven to 210 degrees C. Mix the breadcrumbs and Parmesan cheese salt and pepper as well as a pinch of Thmye. Beat 2 eggs in a bowl until even and add in a pinch of Thyme, salt and pepper. Heat the olive oil in a medium pan over medium heat.
  • Cook: Slice the Chicken breasts in half so that you get two slices per breast, be sure to slice vertically and not horizontally in half. Dip the chicken breast in the eggs then in the breadcrumbs so that they cover the the chicken breast evenly. Let the chicken breast sit for about 5 minutes to dry off so that when you place the chicken in the pan it won't splatter. Add the chicken to the hot pan and fry for 3 minutes on each side. You want the outside to be golden brown. In the mean time you can slice the Zucchini and Mozzarella cheese.
  • Oven: Transfer the chicken onto an oven tray with baking paper. Add the tomato sauce and place the slices of mozzarella cheese on top of each piece of chicken and sprinkle the Parmesan cheese on top. Let it cook in the oven for another 10 minutes. Next in a medium heated pan, add the olive oil and slices of zucchini with some salt and pepper, cook for 5 minutes.
  • Once everything is ready, place the cooked Zucchini slices on a plate and place the Chicken on top, sprinkle some freshly grated Parmesan and Parsley.
