Ingredients

  • 2 tablespoons linseeds Milled
  • 6 tablespoons water
  • 1 1/2 cups oatmeal we recomend the Alara Scottish Oats range!
  • 1 teaspoon ground cinnamon
  • 1 banana
  • 5 1/8 tablespoons syrup Coconut Nectar
  • 1/2 cup almond milk
  • 3 tablespoons cacao nibs we recomend Of The Earth range
  • 1 pinch Himalayan salt

Method

  • Preheat the oven to 180 ° C and line a baking sheet with parchment paper
  • Mix the milled linseeds with the water and set aside
  • Mash the banana with a fork then combine with coconut nectar syrup and the almond milk
  • To the banana mixture add the oatmeal, oats, cinnamon and the linseed mixture. Mix until a cookie dough texture has formed
  • Gently fold the chocolate chips into your cookie dough
  • Scoop the dough onto the baking sheet and flatten the top with the back of your spoon
  • Bake the cookies for 25-30 minutes until they become golden brown but remain fudgy
