Ingredients

  • 2 cups oat bran, uncooked
  • 2 cups whole wheat flour
  • 1/4 cup brown sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract or 1 vanilla bean
  • 1 1/2 cups skim milk or 1 1/2 cups low-fat milk
  • 1 egg
  • 1/4 cup honey or 1/4 cup molasses
  • 2 tablespoons vegetable oil
  • 2 bananas, diced
  • 2 apples, cored and diced

Method

  • In a large bowl combine oat bran, flour (leaving 3 tablespoons), baking powder, brown sugar, salt and cinnamon.
  • Make a well in the center of the mixture.
  • Add milk, vanilla, honey and vegetable oil to the mixture.
  • Mix well to combine. Do not over mix it as it will make the muffins dense.
  • Combine remaining flour to the bananas and apples.
  • Toss to coat well. This will allow the fruits to be evenly distributed in the batter.
  • Fold in the fruits in to the batter.
  • Divide the batter into the prepared muffin tins.
  • Bake the muffins for 20-30 minutes or until the top of the muffins turn golden brown and a skewer inserted in to the middle comes out clean.
