- 2 cups oat bran, uncooked
- 2 cups whole wheat flour
- 1/4 cup brown sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract or 1 vanilla bean
- 1 1/2 cups skim milk or 1 1/2 cups low-fat milk
- 1 egg
- 1/4 cup honey or 1/4 cup molasses
- 2 tablespoons vegetable oil
- 2 bananas, diced
- 2 apples, cored and diced
Method
- In a large bowl combine oat bran, flour (leaving 3 tablespoons), baking powder, brown sugar, salt and cinnamon.
- Make a well in the center of the mixture.
- Add milk, vanilla, honey and vegetable oil to the mixture.
- Mix well to combine. Do not over mix it as it will make the muffins dense.
- Combine remaining flour to the bananas and apples.
- Toss to coat well. This will allow the fruits to be evenly distributed in the batter.
- Fold in the fruits in to the batter.
- Divide the batter into the prepared muffin tins.
- Bake the muffins for 20-30 minutes or until the top of the muffins turn golden brown and a skewer inserted in to the middle comes out clean.
