Ingredients

  • 1/2 c. grated Parmesan cheese
  • 1/2 c. butter
  • 2/3 c. crushed crackers
  • 1/2 tsp. basil
  • 1/2 tsp. oregano
  • 1/2 tsp. salt (optional)
  • 1/2 tsp. garlic powder
  • 1/2 c. finely chopped onion
  • 1 lb. any white fish

Method

  • Place butter and onion in 9 x 13-inch baking dish in 350° oven until butter is melted.
  • Combine cracker crumbs, Parmesan cheese, basil, salt, oregano and garlic.
  • Dip fish fillets in the butter then in crumb mixture.
  • Arrange fillets in baking dish.
  • Bake at 350° for 30 minutes or until fish is tender.
  • In summer, wrap individually in foil and cook on grill until fish flakes.
