Ingredients

  • 1 1/2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. chopped zucchini
  • 1/2 c. (2 oz.) shreeded Cheddar cheese
  • 1/4 c. finely chopped onion
  • 1 egg, beaten
  • 1 c. milk
  • Vegetable oil

Method

  • Combine flour, baking powder, and salt in a large mixing bowl. Stir in zucchini, cheese, and onion; set mixture aside. Combine egg and milk; add to flour mixture, stirring just until moistened. Carefully drop batter by rounded tablespoonfuls into 1 inch hot oil (375°).
  • Cook only a few at a time, turning once. Fry 2 to 3 minutes or until fritters are golden brown.
  • Drain well on paper towels.
