Ingredients

  • 1 c. sugar
  • 1/2 c. margarine, softened
  • 2 eggs
  • 1 c. buttermilk
  • 1 3/4 c. flour
  • 1/2 c. cocoa
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/3 c. chopped pecans

Method

  • Grease bottom only of a loaf pan.
  • In bowl, combine sugar and margarine; blend well.
  • Add eggs; blend well. Stir in buttermilk. Add flour, cocoa, baking powder, baking soda and salt.
  • Stir just until dry ingredients are moistened.
  • Stir in pecans. Pour into prepared loaf pan.
  • Bake at 350° for 55 to 65 minutes.
  • Cool 15 minutes; remove from pan.
  • Cool completely.
  • Wrap tightly and store in the refrigerator.
