Ingredients

  • (Wind Puffs)
  • 5 c. Water, divided
  • 1/2 c. Butter
  • 1/2 tsp Salt
  • 1 c. Sifted flour
  • 4 x Large eggs Veg. oil for frying
  • 3 c. Sugar Peel of 1 lime

Method

  • Place 1 c. water, the butter and salt in a saucepan.
  • Heat to boiling.
  • Remove from heat, and add in flour all at once stirring vigorously till well mixed.
  • Add in Large eggs, one at a time, mixing till well blended after each addition.
  • In a deep kettle, heat oil to 370` on a frying thermometer.
  • Drop mix into oil by tablespoonfuls, frying 5 at a time in the following way: Fry for 2 min uncovered, 2 min covered, 2 min uncovered.
  • Drain on absorbent paper, and place in a dessert bowl.
  • Mix remaining ingredients with 4 c. water, and cook syrup till candy thermometer registers 222`.
  • Pour syrup over the fried bunuelos and serve hot.
