Ingredients

- 5 c. Water, divided
- 1/2 c. Butter
- 1/2 tsp Salt
- 1 c. Sifted flour
- 4 x Large eggs Veg. oil for frying
- 3 c. Sugar Peel of 1 lime
Method
- Place 1 c. water, the butter and salt in a saucepan.
- Heat to boiling.
- Remove from heat, and add in flour all at once stirring vigorously till well mixed.
- Add in Large eggs, one at a time, mixing till well blended after each addition.
- In a deep kettle, heat oil to 370` on a frying thermometer.
- Drop mix into oil by tablespoonfuls, frying 5 at a time in the following way: Fry for 2 min uncovered, 2 min covered, 2 min uncovered.
- Drain on absorbent paper, and place in a dessert bowl.
- Mix remaining ingredients with 4 c. water, and cook syrup till candy thermometer registers 222`.
- Pour syrup over the fried bunuelos and serve hot.
