Ingredients

  • 2 cup creamy peanut butter
  • 1/2 stick butter (unsalted) softened
  • 3 3/4 cup powdered sugar (16oz. box)
  • 2 cup semi sweet chocolate morsels
  • 2 tbsp vegetable oil
  • 1 wax paper
  • 2 large cookie sheets

Method

  • Line 2 large baking sheets with wax paper.
  • Beat peanut butter and softened butter in large mixing bowl until creamy.
  • Beat in powdered sugar until mixture holds together and is moistened.
  • Shape into 1-inch balls, place on baking sheets lined with wax paper.
  • Place in freezer for 1 hour.
  • Just before you remove peanut butter balls from the freezer; melt chocolate morsels and 2 tablespoons vegetable oil in a bowl uncovered in the microwave on high for 1 minute.
  • Add an additional 10-15 seconds if needed.
  • Stir till smooth.
  • Dip peanut butter centers in chocolate using a toothpick, leaving a small portion of the center uncovered.
  • Shake off excess chocolate.
  • Return to waxed baking sheets.
  • With the back of a spoon gently smooth out holes created by the toothpick.
  • Refrigerate until set.
  • Place in covered containers and keep refrigerated.
