Ingredients
- 2 cup creamy peanut butter
- 1/2 stick butter (unsalted) softened
- 3 3/4 cup powdered sugar (16oz. box)
- 2 cup semi sweet chocolate morsels
- 2 tbsp vegetable oil
- 1 wax paper
- 2 large cookie sheets
Method
- Line 2 large baking sheets with wax paper.
- Beat peanut butter and softened butter in large mixing bowl until creamy.
- Beat in powdered sugar until mixture holds together and is moistened.
- Shape into 1-inch balls, place on baking sheets lined with wax paper.
- Place in freezer for 1 hour.
- Just before you remove peanut butter balls from the freezer; melt chocolate morsels and 2 tablespoons vegetable oil in a bowl uncovered in the microwave on high for 1 minute.
- Add an additional 10-15 seconds if needed.
- Stir till smooth.
- Dip peanut butter centers in chocolate using a toothpick, leaving a small portion of the center uncovered.
- Shake off excess chocolate.
- Return to waxed baking sheets.
- With the back of a spoon gently smooth out holes created by the toothpick.
- Refrigerate until set.
- Place in covered containers and keep refrigerated.
