Ingredients
- 2 c. cooked brown rice
- 1 c. chopped green onion
- 1/2 c. each broccoli and green beans or 1 c. of either
- 2 Tbsp. butter
- 2 tomatoes, chopped
- 1 c. shredded Cheddar cheese
- 1/2 to 3/4 c. minced parsley (optional)
- 1 medium garlic clove, minced
- salt and pepper
Method
- Saute onions, broccoli and green pepper in butter, about 3 minutes.
- Mix in rice, tomatoes, cheese, parsley, garlic, salt and pepper to taste.
- Cook 4 minutes longer, covered, until vegetables are tender-crisp.
- Serves 4.
