Ingredients

  • 2 c. cooked brown rice
  • 1 c. chopped green onion
  • 1/2 c. each broccoli and green beans or 1 c. of either
  • 2 Tbsp. butter
  • 2 tomatoes, chopped
  • 1 c. shredded Cheddar cheese
  • 1/2 to 3/4 c. minced parsley (optional)
  • 1 medium garlic clove, minced
  • salt and pepper

Method

  • Saute onions, broccoli and green pepper in butter, about 3 minutes.
  • Mix in rice, tomatoes, cheese, parsley, garlic, salt and pepper to taste.
  • Cook 4 minutes longer, covered, until vegetables are tender-crisp.
  • Serves 4.
