Ingredients

  • 1 medium onion, minced
  • 3 Tbsp. margarine
  • 3 Tbsp. flour
  • 2 c. milk
  • 2 c. chicken broth
  • 1 (10 oz.) pkg. chopped broccoli, thawed
  • 3/4 c. finely diced potatoes
  • 1/4 tsp. nutmeg
  • salt and pepper to taste

Method

  • In a large saucepan, saute onion in margarine until tender. Stir in flour, salt and pepper.
  • Gradually add chicken broth and milk, stirring constantly. Add diced potatoes and broccoli. Sprinkle in nutmeg.
  • Cook over medium-low heat 25 to 30 minutes. Stir occasionally.
  • Pour into serving bowls and sprinkle with grated Cheddar cheese, if desired.
  • Serves 3 to 4.
