Ingredients
- 1 medium onion, minced
- 3 Tbsp. margarine
- 3 Tbsp. flour
- 2 c. milk
- 2 c. chicken broth
- 1 (10 oz.) pkg. chopped broccoli, thawed
- 3/4 c. finely diced potatoes
- 1/4 tsp. nutmeg
- salt and pepper to taste
Method
- In a large saucepan, saute onion in margarine until tender. Stir in flour, salt and pepper.
- Gradually add chicken broth and milk, stirring constantly. Add diced potatoes and broccoli. Sprinkle in nutmeg.
- Cook over medium-low heat 25 to 30 minutes. Stir occasionally.
- Pour into serving bowls and sprinkle with grated Cheddar cheese, if desired.
- Serves 3 to 4.
