Ingredients

  • 1-1/2 cup Broccoli, Chopped
  • 1/4 cups Celery, Diced
  • 1/4 cups Onion, Chopped
  • 1 cup Low Sodium Chicken Broth
  • 2 cups 2% Milk
  • 2 Tablespoons Cornstarch
  • 1/4 teaspoons Salt
  • 1 dash Pepper
  • 1 dash Thyme
  • 1/2 cups Ham, Diced (optional)
  • 1/2 cups Swiss Cheese, Grated

Method

  • Place vegetables and broth in saucepan. Bring to a boil. Reduce heat, cover, and cook until vegetables are tender, about 8 minutes.
  • In a medium sized bowl mix milk, cornstarch, salt, pepper and thyme. Add it into the cooked vegetables. Cook, stirring constantly until soup is slightly thick and mixture just begins to boil. Add ham. Remove from heat. Add cheese. Stir until melted.
