- 1 medium bunch fresh broccoli
- 1/2 c. chopped onion
- 1/2 c. chopped celery
- 4 Tbsp. margarine
- 3 c. cooked rice
- 1 can cream of mushroom soup
- 1 can cream of celery soup
- 1 1/2 c. grated Cheddar cheese
- salt and pepper to taste
- 1/3 c. milk
Method
- Cook broccoli until almost tender. Saute onion and celery in margarine until tender.
- In a large mixing bowl, combine soups and milk. Add to this mixture the vegetables and all other ingredients.
- Pour into buttered casserole dish.
- Bake at 350° for 25 to 30 minutes, covered, then an additional 5 minutes, uncovered.
- Makes 8 to 10 servings.
