Ingredients

  • 1 medium bunch fresh broccoli
  • 1/2 c. chopped onion
  • 1/2 c. chopped celery
  • 4 Tbsp. margarine
  • 3 c. cooked rice
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 1 1/2 c. grated Cheddar cheese
  • salt and pepper to taste
  • 1/3 c. milk

Method

  • Cook broccoli until almost tender. Saute onion and celery in margarine until tender.
  • In a large mixing bowl, combine soups and milk. Add to this mixture the vegetables and all other ingredients.
  • Pour into buttered casserole dish.
  • Bake at 350° for 25 to 30 minutes, covered, then an additional 5 minutes, uncovered.
  • Makes 8 to 10 servings.
