Ingredients
- 1 large onion, chopped
- 1 (10 oz.) pkg. chopped broccoli, thawed
- 1 tsp. salt
- 4 eggs, beaten
- 1/2 c. melted margarine
- 3/4 c. cottage cheese
- 1 (7 oz.) Jiffy corn muffin mix
Method
- Combine onion, broccoli, eggs, margarine, cottage cheese and salt in bowl; mix well.
- Stir in muffin mix just until moistened. Pour into 9 x 13-inch baking dish, well-greased.
- Bake at 400° for 20 minutes or until golden brown (check to make sure the bread is done).
- May take longer than 20 minutes.
- Cool; turn from pan and slice.
