Ingredients

  • 1/2 c. butter, or 1/3 c. vegetable oil
  • 3/4 c. brown sugar
  • 1 egg
  • 1 c. whole wheat flour
  • 1/2 c. white flour
  • 1 tsp. baking soda
  • 3/4 tsp. salt
  • 1 1/4 c. mashed banana (2 large or 3 small)
  • 1/4 c. buttermilk or yoghurt
  • optional: 1 tsp. orange zest
  • 1 c. chocolate chips

Method

  • Beat together butter and brown sugar. Add egg and banana and beat well. Add dry ingredients and buttermilk or yoghurt. Mix only to combine. Add zest or chocolate chips, if desired.
  • Turn in greased 9"x5" loaf pan.
  • Bake at 350 50-60 minutes. Cool in pan 10 minutes. Remove from pan and cool on rack before slicing.
