Ingredients
- 2 c. Broccoli, minced
- 1 tsp Vegetable oil
- 1 x Garlic clove
- 1/2 x Onion, minced
- 1/4 lb Mushrooms, minced
- 3/4 c. Cottage cheese, low fat
- 1/4 c. Yogurt, low fat plain
- 1 pch Salt, pepper
Method
- Cook broccoli just till tender-crisp, (3 min).
- Drain and put under cool water.
- In nonstick skillet, heat oil over medium heat; add in garlic, onion and mushrooms and cook, till onion is tender.
- Set aside.
- In blender, combine cottage cheese and yogurt; season with salt and pepper to taste.
- Process just till mixed.
- Cover and chill.
- Makes 2 1/2 c..
