Ingredients

  • 2 c. Broccoli, minced
  • 1 tsp Vegetable oil
  • 1 x Garlic clove
  • 1/2 x Onion, minced
  • 1/4 lb Mushrooms, minced
  • 3/4 c. Cottage cheese, low fat
  • 1/4 c. Yogurt, low fat plain
  • 1 pch Salt, pepper

Method

  • Cook broccoli just till tender-crisp, (3 min).
  • Drain and put under cool water.
  • In nonstick skillet, heat oil over medium heat; add in garlic, onion and mushrooms and cook, till onion is tender.
  • Set aside.
  • In blender, combine cottage cheese and yogurt; season with salt and pepper to taste.
  • Process just till mixed.
  • Cover and chill.
