Ingredients

  • 6 eggs
  • 1 stick margarine
  • 1/2 c. flour
  • 2 c. cottage cheese
  • 1/2 lb. Monterey Jack cheese, shredded
  • 1/2 lb. sharp Cheddar cheese, shredded
  • 3 oz. cream cheese
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. sugar

Method

  • Melt margarine and add flour to make a paste (set aside). Whip eggs in a large bowl; add cheeses, baking powder, salt and sugar.
  • Add flour/margarine paste.
  • Place in 9 x 13-inch baking dish (glass is best) and bake for 45 minutes at 350°.
  • Can also mix night before, refrigerate and bake in morning.
  • Serves 6 to 8 people.
