Ingredients

  • 6 medium size tomatoes, sliced
  • 1 (4 oz.) pkg. crumbled Feta cheese (1 c.)
  • 1 small onion, thinly sliced
  • 1 (3 1/2 oz.) can pitted ripe olives, drained and sliced
  • 1/3 c. olive oil
  • 1/3 c. red wine vinegar
  • 2 Tbsp. minced parsley
  • 4 tsp. sugar
  • 1/2 tsp. dried basil leaves
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • lettuce leaves

Method

  • About 2 1/2 hours before serving or early in day, place sliced tomatoes, Feta cheese, onion and olives in a 13 x 9-inch glass baking dish.
  • In a small bowl with fork, mix olive oil, vinegar, parsley, sugar, basil, salt and pepper.
  • Pour dressing over tomato mixture.
  • With rubber spatula, gently lift tomato slices to coat with dressing.
  • Cover baking dish and refrigerate at least 2 hours to blend flavors.
