Ingredients

  • 4 ounces chorizo sausage
  • 12 red onion, chopped fine
  • 3 garlic cloves, crushed
  • 4 ounces green chilies, chopped
  • 12 cup cilantro leaf, chopped
  • 1 cup egg substitute (I use egg beaters)
  • 4 corn tortillas
  • 12 cup low-fat cheddar cheese, shredded

Method

  • Spray a skillet with some cooking spray to ensure that nothing sticks.
  • Break the chorizo into small pieces and cook until they're done.
  • There's usually a bit of grease, so I drain that right away.
  • Add in the onion, garlic, chiles, and cilantro.
  • Saute until the onions are soft, which is usually about a minute or two.
  • Add in the egg subsitute and scramble everything together.
  • I put the tortillas in the toaster oven to warm then up.
  • Once they're done put the egg mixute in them, towards the center.
  • I sprinkle the cheese over that, thenr oll them up!
