Ingredients

  • 4 eggs
  • 1 cup caster sugar
  • 1½ teaspoons imitation vanilla essence
  • 1 teaspoon nutmeg
  • 1½ teaspoons ground cinnamon
  • 45 g butter, melted
  • 2 teaspoons grated lemon rind
  • 1½ cups milk
  • ½ cup cream
  • 12 thick slices bread
  • ½ cup chopped dates
  • ¼ cup chopped pecans

Method

1. In a food processor combine eggs, sugar, vanilla, nutmeg, cinnamon and butter. Add rind, milk and cream, stir.

2. Cut the bread into 3 cm squares.

3. Grease a casserole. Place one third of the bread in a single layer on the base of the casserole dish. Cover with half the dates and pecans, and spoon on half the custard. Repeat the procedure with another third of the bread and the remaining dates, pecans and custard.

4. Cover with the remaining bread and set aside for about 30 minutes.

5. Bake in a preheated oven at 180°C for 45–50 minutes until cooked through. Serve hot.
