Ingredients

  • 25 cucumbers (3 to 5 inches in length)
  • 1 qt. vinegar
  • 2 tsp. mustard seed
  • 12 onions
  • 2 c. sugar
  • 2 tsp. turmeric
  • 2 tsp. celery seed

Method

  • Wash and drain vegetables.
  • Slice cucumbers and onions.
  • Soak in salt solution (2 quarts ice water and 1/2 cup salt) for 3 hours. Mix vinegar, sugar and spices.
  • Bring to a boil.
  • Add cucumbers and onions just to heat through.
  • Pack hot cucumbers into jars, leaving 1/2-inch headspace.
  • Cover with boiling hot liquid.
  • Adjust lids. Process in boiling water bath for 15 minutes.
