Ingredients
- 25 cucumbers (3 to 5 inches in length)
- 1 qt. vinegar
- 2 tsp. mustard seed
- 12 onions
- 2 c. sugar
- 2 tsp. turmeric
- 2 tsp. celery seed
Method
- Wash and drain vegetables.
- Slice cucumbers and onions.
- Soak in salt solution (2 quarts ice water and 1/2 cup salt) for 3 hours. Mix vinegar, sugar and spices.
- Bring to a boil.
- Add cucumbers and onions just to heat through.
- Pack hot cucumbers into jars, leaving 1/2-inch headspace.
- Cover with boiling hot liquid.
- Adjust lids. Process in boiling water bath for 15 minutes.
