Ingredients

  • 300 grams self raising flour
  • 110 grams castor sugar
  • 170 grams brazil nuts ,roughly chopped
  • 1 egg ,slightly beaten
  • 180 ml milk
  • 60 grams butter ,melted
  • 12 whole brazil nuts
  • 225 grams packet ,jersey ,chocolate or plain caramels

Method

  • grease 12 hole muffin pan.
  • Sift flour into a large bowl ,stir in sugar,chopped nuts,egg,milk and meted butter.
  • Keep muffin mixture quite rough do not stir until very smooth.
  • spoon half the mixture into the prepared pan.place one or two caramels into centre of each muffin,top wiith remaining half.Top each with a brazil nut.
  • bake in a moderate oven about 20 minutes and golden brown.
