Ingredients

  • 400g macaroni
  • 1 bunch asparagus (cut into 2cm pieces)
  • 200g beans (trimmed and cut into 2cm pieces)
  • 1 tbsp butter
  • 1 tbsp extra virgin olive oil
  • Cook 1 onion (sliced) 300g leg ham (diced).
  • 1 cup pouring cream
  • 1/2 cup parmesan (finely grated)
  • Serve with extra grated parmesan.

Method

Cook 400g macaroni in lightly salted boiling water until al dente. Drain and set aside.

Blanch 1 bunch asparagus (cut into 2cm pieces) and 200g beans (trimmed and cut into 2cm pieces) in lightly salted boiling water for 2-3 minutes, then drain.

Place 1 tbsp butter and 1 tbsp extra virgin olive oil in a large pan over medium heat. Cook 1 onion (sliced) for 3-4 minutes. Add asparagus, beans and 300g leg ham (diced) and stir for 3-4 minutes. Add 1 cup pouring cream and 1/2 cup parmesan (finely grated) and cook, stirring, for 2 minutes.

Pour sauce over pasta and toss to combine.

To serve 

Serve with extra grated parmesan.
