Ingredients

  • 1 egg beaters Medium Sized Pkg
  • 2 tablespoons minced garlic
  • olive oil
  • 1 package frozen creamed spinach Cooked about half recommended time.
  • 1 can artichokes Chopped
  • 5 tomatoes cut into wedges
  • 1 package cheese low fat Feta
  • 1 package Parmesan cheese
  • seasoned salt
  • 2 tablespoons sun-dried tomato pesto Classico

Method

  • In non-stick frying pan, saute garlic in olive oil for a minute or two. Add chopped tomatoes & saute about 1 minute. Remove from heat.
  • Add remaining ingredients except parmesan cheese & stir Pour into glass baking dish sprayed with Pam. Bake in hot oven (425) until set and pulls away from sides of pan, about 30 - 40 minutes. Add parmesan cheese and return to oven until melted.
  • Can be frozen.
