Ingredients

  • 1 1/2 c. Flour
  • 1/2 c. Sugar
  • 2 tsp Baking pwdr
  • 1/2 c. Lowfat milk
  • 1/2 c. Butter, melted
  • 1 lrg Egg, beaten
  • 1 c. Boysenberries, frzn or possibly fresh, divided
  • 1/4 c. Pecans, minced
  • 1/4 c. Brown sugar, packed
  • 1/4 c. Flour
  • 2 Tbsp. Butter, melted

Method

  • In a large bowl, combine flour, sugar and baking pwdr.
  • Beat together lowfat milk, cooled melted butter and egg, and add in to flour mix, stirring just till moistened.
  • Spoon about 1 Tbsp.
  • of batter into each greased or possibly paper-lined c. of 12-muffin tin.
  • Divide half of the Boysenberries among the c., top each with remaining batter, then add in remaining Boysenberries.
  • For topping, combine pecans, brown sugar, flour and butter.
  • Sprinkle over batter and bake in 350 oven for 20-25 min, or possibly till toothpick inserted in middle comes out clean
