Ingredients
- 1 oz. dried mushrooms
- 1 chopped onion
- 2 medium beets, chopped
- 1 carrot, chopped
- 1 celery, chopped
- 1 c. chopped cabbage
- 1 whole onion
- 10 peppercorns
- 1 bay leaf
- 1 Tbsp. lemon juice
- 2 Tbsp. tomato paste
Method
- Simmer the dried mushrooms in 3 cups of water for 1 hour. Strain them through a cheese cloth, but save the stock.
- Wash mushrooms thoroughly and save.
