Ingredients

  • 64 oz. beef broth
  • 1 medium red onion
  • 2 chili peppers
  • 3 lb. beef
  • 2 Tbsp. Crisco
  • 3 cloves garlic
  • 1/2 tsp. salt
  • 1 tsp. oregano
  • 2 Tbsp. cumin
  • 1 Tbsp. chili powder
  • 1 tsp. black pepper
  • 1 tsp. paprika
  • 6 oz. tomato paste
  • 2 Tbsp. masa flour

Method

  • Simmer beef broth, peeled red onion and seeded chili peppers for one hour.
  • Remove onion and peppers and finely chop them.
  • In a large pot melt the Crisco and saute the garlic, onion and peppers.
  • Cut the beef into 1/2 inch squares and add them to the pot.
  • Cook them over medium heat until they are gray.
  • Add the salt, oregano, cumi, chili pepper, black pepper and paprika and stir together for about 2 minutes.
  • Add the beef broth and simmer over low for 2 hours.
  • Stir in masa flour and cook for another 20 minutes.
  • Serve when at the proper thickness.
