Ingredients

  • 5 c. flour
  • 1 1/2 c. sugar
  • 2 Tbsp. baking powder
  • 1/2 tsp. salt
  • 3/4 c. margarine
  • 1 1/2 c. walnuts (optional)
  • 2 c. milk
  • 2 c. fresh or frozen blueberries (if frozen, do not thaw)
  • 2 tsp. vanilla

Method

  • Preheat oven to 350°.
  • Grease and flour 10-inch Bundt pan.
  • In large bowl mix flour, sugar, baking powder and salt.
  • Cut in margarine until mixture resembles fine crumbs.
  • Stir in walnuts. In small bowl, beat eggs slightly, then beat in milk and vanilla, mix well.
  • Stir into flour mixture, just until moistened.
  • Gently fold in blueberries.
  • Pour into Bundt pan.
  • Bake 1 hour and 20 minutes.
  • Cool on wire rack 10 minutes.
  • Remove from pan and finish cooling.
  • Makes approximately 24 servings.
