Ingredients

  • 1 lb. boneless pork loin
  • 2 garlic cloves, minced
  • 4 Tbsp. soy sauce, divided
  • 1 c. chicken broth
  • 2 Tbsp. cornstarch
  • 1/2 to 1 tsp. ground ginger
  • 1 Tbsp. cooking oil
  • 1 c. thinly sliced carrots
  • 1 c. thinly sliced celery
  • 1 c. chopped onion
  • 1 c. coarsely chopped cabbage
  • 1 c. coarsely chopped fresh spinach
  • hot, cooked rice (optional)

Method

  • Cut pork into 4 x 1/2 x 1/4-inch strips.
  • Place in a bowl. Add garlic and 2 tablespoons soy sauce.
  • Cover and refrigerate 2 to 4 hours.
  • Meanwhile, combine broth, cornstarch, ginger and remaining soy sauce; mix well and set aside.
