- 1 lb. boneless pork loin
- 2 garlic cloves, minced
- 4 Tbsp. soy sauce, divided
- 1 c. chicken broth
- 2 Tbsp. cornstarch
- 1/2 to 1 tsp. ground ginger
- 1 Tbsp. cooking oil
- 1 c. thinly sliced carrots
- 1 c. thinly sliced celery
- 1 c. chopped onion
- 1 c. coarsely chopped cabbage
- 1 c. coarsely chopped fresh spinach
- hot, cooked rice (optional)
Method
- Cut pork into 4 x 1/2 x 1/4-inch strips.
- Place in a bowl. Add garlic and 2 tablespoons soy sauce.
- Cover and refrigerate 2 to 4 hours.
- Meanwhile, combine broth, cornstarch, ginger and remaining soy sauce; mix well and set aside.
