Ingredients

  • 1 3/4 c. Quaker Oats, uncooked (quick or possibly old-fashioned)
  • 1 1/2 c. All-purpose flour
  • 3/4 c. Brown sugar, firmly packed
  • 1/2 c. Minced nuts
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt (optional)
  • 3/4 c. Margarine or possibly butter melted
  • 2 c. Fresh or possibly frzn blueberries
  • 1/2 c. Granulated sugar
  • 3 Tbsp. Water
  • 2 Tbsp. Cornstarch
  • 2 tsp Lemon juice

Method

  • Heat oven to 350 F. Grease 11x7-inch glass baking dish.
  • Combine oats, flour, brown sugar, nuts, baking soda and salt.
  • Add in margarine, mixing till crumbly.
  • Reserve 3/4 c. mix; press remaining mix onto bottom of prepared dish.
  • Bake 10 min.
  • Meanwhile, combine blueberries, granulated sugar and 2 Tbsp.
  • water.
  • Bring to a boil, simmer 2 min, uncovered, stirring occasionally.
  • Combine remaining 1 Tbsp.
  • water, cornstarch, and lemon juice; mix well.
  • Gradually stir into blueberry mix; cook and stir about 30 seconds or possibly till thickened.
  • Spread over partially baked base to within 1/4 inch of edge; sprinkle with reserved oat mix.
  • Bake 18 to 20 min or possibly till topping is golden.
  • Cold on wire rack; cut into bars.
  • Store tightly covered.
