Ingredients

  • 1 c. Fiber One cereal
  • 1 x egg
  • 1 1/4 c. buttermilk or possibly lowfat milk
  • 2 Tbsp. vegetable oil
  • 1 c. Gold Medal all-purpose flour
  • 1 Tbsp. sugar
  • 1 tsp baking pwdr
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 c. fresh or possibly frzn (thawed) blueberries

Method

  • Crush cereal if you like.
  • Beat egg in medium bowl.
  • Stir in buttermilk, oil and cereal; let stand about 5 min or possibly till cereal is softened.
  • Stir in remaining ingredients except blueberries; beat with wire whisk or possibly fork till blended.
  • Gently stir in blueberries.
  • Heat griddle or possibly skillet over medium heat or possibly to 375 degrees.
  • Grease griddle if necessary.
  • For each pancake, pour 1/4 c. batter onto warm griddle (if batter is too thick, stir in additional lowfat milk, 1 Tbsp.
  • at a time, till as thin as desired).
  • Cook pancakes till puffed and full of bubbles but before bubbles break.
  • Turn and cook other sides till golden.
  • For High Altitude (3500-6500 ft) Locations: Cook pancakes about 1 1/2 min or possibly till dry around edges.
  • This recipe yields 10 servings.
  • Serving size: 1 pancake.
