Ingredients
- 1 bottle clam juice (8 oz.)
- 6 medium potatoes
- 2 stalks celery
- 2 medium onions
- 6 strips bacon
- 40 oz. regular milk (1 qt. plus 8 oz.)
- 32 oz. light cream (2 pt.)
- 1/2 lb. butter
- 1 1/2 tsp. dill
- 5 (6 1/2 oz. each) cans minced clams and juice
- salt and pepper to taste
Method
- Pour clam juice in a large pot.
- Add diced
- potatoes, diced celery and diced onions. Broil bacon, do not crisp.
- Dice and add bacon. Add milk, cream and butter (cut in half). Add clams and juice. Salt and pepper to taste.
- Add dill. Slowly simmer 90 minutes to 2 hours.
- Do not let boil. Do not use lid. Stir while cooking.
- Serves 5 1/2 quarts.
