Ingredients

  • 1 bottle clam juice (8 oz.)
  • 6 medium potatoes
  • 2 stalks celery
  • 2 medium onions
  • 6 strips bacon
  • 40 oz. regular milk (1 qt. plus 8 oz.)
  • 32 oz. light cream (2 pt.)
  • 1/2 lb. butter
  • 1 1/2 tsp. dill
  • 5 (6 1/2 oz. each) cans minced clams and juice
  • salt and pepper to taste

Method

  • Pour clam juice in a large pot.
  • Add diced
  • potatoes, diced celery and diced onions. Broil bacon, do not crisp.
  • Dice and add bacon. Add milk, cream and butter (cut in half). Add clams and juice. Salt and pepper to taste.
  • Add dill. Slowly simmer 90 minutes to 2 hours.
  • Do not let boil. Do not use lid. Stir while cooking.
  • Serves 5 1/2 quarts.
