- 2 (15 oz.) cans black-eyed peas, drained
- 2 scallions or green onions, sliced
- 1 red bell pepper, chopped
- 1/2 green bell pepper, chopped
- 1/4 c. fresh parsley, chopped
- 1/4 c. fresh chervil, chopped
- 1 clove garlic, minced
- 1/2 c. olive oil
- 5 Tbsp. red wine vinegar
- 1 to 2 Tbsp. whole grain mustard
- 1 fresh jalapeno pepper, minced
- salt and freshly ground black pepper
Method
- Combine first 7 ingredients in large bowl.
- In small bowl whisk together oil, vinegar, mustard, jalapeno, salt and pepper. Pour over pea mixture and serve immediately.
