Ingredients

  • 2 (15 oz.) cans black-eyed peas, drained
  • 2 scallions or green onions, sliced
  • 1 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 1/4 c. fresh parsley, chopped
  • 1/4 c. fresh chervil, chopped
  • 1 clove garlic, minced
  • 1/2 c. olive oil
  • 5 Tbsp. red wine vinegar
  • 1 to 2 Tbsp. whole grain mustard
  • 1 fresh jalapeno pepper, minced
  • salt and freshly ground black pepper

Method

  • Combine first 7 ingredients in large bowl.
  • In small bowl whisk together oil, vinegar, mustard, jalapeno, salt and pepper. Pour over pea mixture and serve immediately.
