- 1 pound black beans
- 1 teaspoon oregano
- 1 large onions chopped
- 3 each bay leaves
- 1 clove garlic
- 1/2 cup vinegar
- 1 each green bell peppers chopped
- 2 cups brown rice cooked
- 2 teaspoons olive oil
- 1 each ham hock trim fat
Method
- Wash the beans and soak overnight in 2 quarts of cold water.
- Saute the onion ( and it's just as good if you leave the onion raw), garlic and pepper in the oil.
- Combine all the ingredients except the vinegar and rice, and cook over low heat until the beans are tender.
- Add the vinegar and serve over the rice.
