Ingredients

  • 1 pound black beans
  • 1 teaspoon oregano
  • 1 large onions chopped
  • 3 each bay leaves
  • 1 clove garlic
  • 1/2 cup vinegar
  • 1 each green bell peppers chopped
  • 2 cups brown rice cooked
  • 2 teaspoons olive oil
  • 1 each ham hock trim fat

Method

  • Wash the beans and soak overnight in 2 quarts of cold water.
  • Saute the onion ( and it's just as good if you leave the onion raw), garlic and pepper in the oil.
  • Combine all the ingredients except the vinegar and rice, and cook over low heat until the beans are tender.
  • Add the vinegar and serve over the rice.
