Ingredients
- 1 lb. beef chuck, cut into thin strips
- 2 Tbsp. Crisco or drippings
- 2 Tbsp. minced onion
- 2 tsp. cornstarch
- 3 c. boiled rice
- 2 large peppers, cut into strips
- 1/2 c. celery, sliced crosswise
- 2 tsp. water
- 1 tsp. soy sauce
Method
- Melt Crisco or drippings.
- Add beef and brown slowly over a low flame.
- Add onion, green peppers, celery and 1/2 cup liquid. Season with salt and pepper.
- Cover and simmer 20 minutes. Thicken with cornstarch blended with water and soy sauce.
- Simmer 5 minutes.
- Serve hot with boiled rice.
- Serves 4.
