Ingredients

  • 1 lb. beef chuck, cut into thin strips
  • 2 Tbsp. Crisco or drippings
  • 2 Tbsp. minced onion
  • 2 tsp. cornstarch
  • 3 c. boiled rice
  • 2 large peppers, cut into strips
  • 1/2 c. celery, sliced crosswise
  • 2 tsp. water
  • 1 tsp. soy sauce

Method

  • Melt Crisco or drippings.
  • Add beef and brown slowly over a low flame.
  • Add onion, green peppers, celery and 1/2 cup liquid. Season with salt and pepper.
  • Cover and simmer 20 minutes. Thicken with cornstarch blended with water and soy sauce.
  • Simmer 5 minutes.
  • Serve hot with boiled rice.
  • Serves 4.
