Ingredients
- 2 c. black beans, cooked
- 2 garlic cloves, chopped
- 1 c. chopped onions
- 1 tsp. ground cumin
- 1 tsp. ground coriander or chopped fresh coriander
- 2 large carrots
- 2 yellow zucchini squash
- 3 green or red chili peppers
- 3 to 4 really ripe tomatoes
Method
- Cook beans. I use a pressure cooker; cover with enough water, 3-inches above beans, and cook 15 to 20 minutes.
- Drain excess water.
- Blanch carrots and squash. Cut into cubes.
- Chop tomatoes. Combine. Can use as salsa or as filling for burritos.
- Combine with rice if desired.
