Ingredients

  • 2 c. black beans, cooked
  • 2 garlic cloves, chopped
  • 1 c. chopped onions
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander or chopped fresh coriander
  • 2 large carrots
  • 2 yellow zucchini squash
  • 3 green or red chili peppers
  • 3 to 4 really ripe tomatoes

Method

  • Cook beans. I use a pressure cooker; cover with enough water, 3-inches above beans, and cook 15 to 20 minutes.
  • Drain excess water.
  • Blanch carrots and squash. Cut into cubes.
  • Chop tomatoes. Combine. Can use as salsa or as filling for burritos.
  • Combine with rice if desired.
