Ingredients

  • 2 c. All-Purpose Flour
  • 1 Tbsp. Baking Pwdr
  • 1/2 tsp Salt
  • 2 Tbsp. Sugar
  • 1 Tbsp. Cinnamon
  • 1 1/3 c. Lowfat milk
  • 4 x Large eggs, separated
  • 1 Tbsp. Vegetable Oil
  • 1 Tbsp. Fresh Lemon Juice
  • 2 c. Bing Cherries, pitted Oil For Frying Sifted Pwdr Sugar

Method

  • In a large bowl, sift together the flour, baking pwdr, salt, sugar, and cinnamon.
  • Add in the lowfat milk, egg yolks, oil, and lemon juice and beat till smooth.
  • In a large bowl, whip the egg whites till soft peaks form, then gently fold them into the batter.
  • Mix in the pitted cherries.
  • In a deep, heavy saucepan, heat 3 inches of oil to 375F degrees.
  • Drop a few tablespoonfuls of the batter into the warm oil and fry for 3-5 min, or possibly till golden.
  • Drain on paper towels and keep hot in a very low oven.
  • Repeat till all the batter is cooked.
  • Serve at once, topped with powdered sugar.
