Ingredients

  • 5 lb. potatoes
  • 4 large hard-boiled eggs, chopped
  • 1 large onion, chopped small
  • 1/2 lb. lean bacon
  • 1 Tbsp. drippings
  • 1 c. Hellmann's mayonnaise (more if desired)
  • salt and pepper

Method

  • Boil potatoes with the skins on.
  • Cool before peeling.
  • Boil eggs.
  • Chop bacon small; brown until crisp, reserving 1 tablespoon of drippings.
  • Drain on paper towel.
  • In a large mixing bowl, cut potatoes into bite size pieces.
  • Add eggs, onion, bacon and at least 1 cup of mayonnaise (more may be added to reach desired consistency).
  • Salt and pepper to taste.
