Ingredients
- 5 lb. potatoes
- 4 large hard-boiled eggs, chopped
- 1 large onion, chopped small
- 1/2 lb. lean bacon
- 1 Tbsp. drippings
- 1 c. Hellmann's mayonnaise (more if desired)
- salt and pepper
Method
- Boil potatoes with the skins on.
- Cool before peeling.
- Boil eggs.
- Chop bacon small; brown until crisp, reserving 1 tablespoon of drippings.
- Drain on paper towel.
- In a large mixing bowl, cut potatoes into bite size pieces.
- Add eggs, onion, bacon and at least 1 cup of mayonnaise (more may be added to reach desired consistency).
- Salt and pepper to taste.
