Ingredients

  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 cup butter or margarine
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2 eggs
  • 2 cups quick cooking oatmeal
  • 1 tsp baking soda
  • 2 cups flour
  • 3/4 cup raisins (optional)

Method

  • Mix oatmeal, baking soda, and flour in small bowl and set aside.
  • Cream sugars, butter, vanilla and almond extract in mixing bowl.
  • Add eggs and mix well.
  • Add dry mixture to butter/sugar mixture and stir together.
  • Add raisins if desired. Place dough by teaspoonfuls onto ungreased baking sheets.
  • Bake at 350° for about 12 minutes or until edges are lightly browned.
  • Cool cookies slightly before removing them from the sheets.
  • Make about 3 1/2 dozen cookies.
