Ingredients

  • 2 2/3 c. unbleached flour
  • 1 teaspoon baking pwdr
  • 1 teaspoon salt
  • 1/2 c. sugar
  • 2 Large eggs
  • 1 c. lowfat milk
  • 2/3 c. extra virgin olive oil
  • 1 c. blueberries
  • 1/2 teaspoon lemon peel, grated

Method

  • Preheat oven to 350 degrees.
  • Mix thoroughly together in mixing bowl all ingredients, except blueberries.
  • Gently spoon berries in mix.
  • Spoon in paper lined or possibly greased muffin tin.
  • Bake 20 min.
  • Remove from oven and dip top of each muffin in melted butter, then in reserved sugar.
