Ingredients
- 2 2/3 c. unbleached flour
- 1 teaspoon baking pwdr
- 1 teaspoon salt
- 1/2 c. sugar
- 2 Large eggs
- 1 c. lowfat milk
- 2/3 c. extra virgin olive oil
- 1 c. blueberries
- 1/2 teaspoon lemon peel, grated
Method
- Preheat oven to 350 degrees.
- Mix thoroughly together in mixing bowl all ingredients, except blueberries.
- Gently spoon berries in mix.
- Spoon in paper lined or possibly greased muffin tin.
- Bake 20 min.
- Remove from oven and dip top of each muffin in melted butter, then in reserved sugar.
