Ingredients
- 1 (16 oz.) can sliced beets, diced small
- 1 c. celery, diced
- 1 (3 oz.) pkg. lemon jello
- pinch of salt
- tiny bit of horseradish (optional)
- 1 small onion, diced
- 1/4 c. vinegar
- 1/2 c. sugar
- 1/4 c. Miracle Whip
Method
- Drain beets, reserving juice.
- Dice beets.
- Add beet juice to vinegar to make 1 cup liquid.
- Add sugar and salt to liquid. Bring to a boil.
- Pour over jello, stirring until dissolved. Chill until cool.
- Add beets, celery and onion.
- Chill until set. Spread with Miracle Whip to which you have added a tiny bit of horseradish.
- Also good without the horseradish.
