Ingredients

  • 1 (16 oz.) can sliced beets, diced small
  • 1 c. celery, diced
  • 1 (3 oz.) pkg. lemon jello
  • pinch of salt
  • tiny bit of horseradish (optional)
  • 1 small onion, diced
  • 1/4 c. vinegar
  • 1/2 c. sugar
  • 1/4 c. Miracle Whip

Method

  • Drain beets, reserving juice.
  • Dice beets.
  • Add beet juice to vinegar to make 1 cup liquid.
  • Add sugar and salt to liquid. Bring to a boil.
  • Pour over jello, stirring until dissolved. Chill until cool.
  • Add beets, celery and onion.
  • Chill until set. Spread with Miracle Whip to which you have added a tiny bit of horseradish.
  • Also good without the horseradish.
