Ingredients
- 2 c. raw cranberries, cut in half
- 1 1/3 c. flour
- 1 egg, beaten
- 1 tsp. baking powder
- 2 tsp. soda, dissolved in 1/3 c. hot water
- 1/2 c. molasses
- 1/2 tsp. salt
Method
- Combine cranberries and all dry ingredients.
- Add egg to molasses.
- Mix into dry ingredients.
- Add soda and water.
- Pour into greased round tins.
- (I use large soup cans.)
- Place on rack in roaster.
- Add water to bottom of roaster.
- Place aluminum foil over top of pudding and steam 1 hour and 20 minutes at 325°.
