Ingredients

  • 2 c. raw cranberries, cut in half
  • 1 1/3 c. flour
  • 1 egg, beaten
  • 1 tsp. baking powder
  • 2 tsp. soda, dissolved in 1/3 c. hot water
  • 1/2 c. molasses
  • 1/2 tsp. salt

Method

  • Combine cranberries and all dry ingredients.
  • Add egg to molasses.
  • Mix into dry ingredients.
  • Add soda and water.
  • Pour into greased round tins.
  • (I use large soup cans.)
  • Place on rack in roaster.
  • Add water to bottom of roaster.
  • Place aluminum foil over top of pudding and steam 1 hour and 20 minutes at 325°.
